I love this stuff. Terlingua is a Texas requirement. I remember reading a book about black cowboys. One of them became well known in the town and was in charge of cooking the chili during festivals and holidays. For the life of me I can't remember the names.
I have a book on my shelf called, "Black Cowboys of Texas," edited by Sara R. Massey (Texas A&M University Press, 2000). Could that be the book you're thinking of? If so, and you recall which cowboy was the chili chef let me know. I've only read certain sections. If not, and you recall the title of a different book about black cowboys let me know. I'd be interested in that volume.
I always enjoy reading Derrick's history and humor. Even if his faulty chili recipe does not include beans!

I just realized I can search "chili" in Google Books. Look at chapter 18 Matthew "Bones" Hooks. A Pioneer of Honor.
